Bruschetta is a super easy, super delicious dish with only a few ingredients. If you’ve never cooked with sun-dried tomatoes before, this recipe introduces them to you. I’m sure that you’ll be impressed with the burst of intense flavor sun-dried tomatoes add to your dish.
This dish works great as an appetizer or a snack for a party, but with the bread, cheese and hearty tomatoes, it can be a meal in itself. Sometimes I will take the tomato mixture and serve it over pasta. Another way I have serve bruschetta is putting the mixture on top of pie crust and baking the whole thing — a pizza pie! It’s wonderful, so many ways, especially when served warm.
