Lemon Honey Salad Dressing

We are making a wonderful, springtime Lemon Honey Dress for salads. I know that many of you are already planting lettuces and other greens in your gardens — it is that time of year. So I’ve come up with this salad dressing that is very light and fresh. It won’t overpower the delicate taste of spring greens fresh from the garden.
It’s also a wonderful complement for a traditional chopped salad. The honey gives the dressing a subtle sweetness and the fresh lemon juice gives it a brightness that you have to taste to really know what I mean.
I have also found that this makes a great marinade for chicken or pork. Try it! Serving Suggestion: Pair this with slices home made bread.
Lemon Honey Salad Dressing
Combine all ingredients in a blender or food processer and then blend 30-40 seconds. Makes enough to dress 6-8 large salads. Lasts 5-7 days in the refrigerator.

A new day has come to my door,
Fresh and full of life.
With gratitude and a sense of wonder,
I greet this day and You, My God,
The sacrament of sleep has healed my heart
And granted strength to my body.
My cousins in creation —
Trees, birds, fish and four-legged creatures —
Are arising with a song with a song of adoration
I desire to join my prayer with theirs.
May my simple praises be in harmony
With the songs of the wind and the earth,
As I now enter into the prayer of stillness.
May I listen to day to the prayers
of wind, earth, lakes and rivers, and all that grows.
With your holy help, I shall live prayerfully
In harmony with that continuous
And blessed prayer of your creation.
