I grew up on these things. My mom would make them for my brother and me in the mornings, especially on the weekends when we had more time to make the breakfast meal. They bring back a lot of memories, good ones.
It’s a simple, old fashion recipe that has a lot of variations, but usually everything you need is already in your pantry or refrigerator.
It’s also a good recipe to make with children. Bring them into the kitchen, spend some quality time with them and pass down this recipe to another generation.
This recipe makes about 10 crepes, which is enough for about five people — unless, you’re like my family growing up and we’d eat 10 apiece!
Another good thing about this recipe is that you can make up a couple of batches of the palačinke, layer them between sheets of parchment paper in a zip lock bag and freeze them. The parchment paper makes them easier to separate. Take out as many palačinke as you need, and keep the rest in the freezer. They will keep for up to two months.
Palačinke (Croatian Crepes)
● 1 cup all-purpose flour
● 1 cup milk
● pinch of salt
● 3 eggs
● 1/3 cup club soda
● splash of rum or bourbon (optional)
Sweet Filings: jams, jellies, Nutella, fresh fruit, yogurt, pancake syrup.
Savory Fillings: scrambled eggs, eggs with bacon or pancetta, ground beef and veggies, onions or peppers, spinach and feta cheese.
Prayer for Peace
Lord Jesus Christ,
Make us instruments of your peace.
Where there is hatred, let us sow love.
Where there is injury, let us offer pardon.
Where there is discord, let us build peace.
Oh Divine Lord, you taught us that those who work for peace
are called the children of God.
Help us to persist in establishing justice and truth
as firm and lasting foundations of peace.
Lord, you offer us peace as a gift
and peace as a responsibility that we must realize with your help.
Give us the grace to reach for peace,
to have attitudes of peace,
that our words may be of peace,
and that our works be works of peace.
Then, may we build the peace that we and our nations need.
