This strawberry vinaigrette is the perfect dressing for summertime salads. It’s light and fresh, with a touch of sweetness that pairs nicely with the just-out-of-the-garden lettuces and greens available now.
And it is so simple to make. This recipe makes about one cup of dressing.
Strawberry Vinaigrette
Put all the ingredients, except the oil, into a food processor or blender and process about one minute. Add oil and process again for about one minute.
I am using the dressing on a grilled chicken and spinach salad with apples, pecans and dried cranberries. It is great as a main dish or a side dish at a barbecue. Make and take it to a gathering where you want to bring something that is homemade, fresh and new. This will be the hit of the party, guaranteed.
This is a fairly simple meal, but as I was preparing it, I got to thinking about how many hands it takes to bring this to the table. From those who plant the seeds, cultivate the crops,, pick the produce, sell it to us, prepare and serve it. I really think it is nothing short of a miracle that we can bring these fresh fruits and vegetables to the table to nourish our family, friends and ourselves.
With that in mind, I have a little devotional to share with you today. The bible verse I use is Ephesians 2:10
For we are God’s masterpiece. He has created us anew in Christ Jesus, so we can do the good things he planned for us long ago.

Using threats, shame and guilt to gain another’s cooperation is expedient but ineffective over the long-run. On the other hand, inviting someone to join us in a common work or goal, respects the other, is more constructive and more often results in substantive and long-lasting change.
